'Twas the night before Thanksgiving...

Our neighbor will be joining us for Thanksgiving tomorrow. Her husband had to be taken by ambulance to the hospital this morning so I invited her and her son - who is driving in from Detroit - to join us. Let's hope my little 12 lb. turkey is enough!

Thanksgiving five or so years ago Christian asked if I could make mashed potatoes with bacon and cheese in them. When I made them I asked him if he wanted to help me. That has now morphed into the tradition of each boy picking a dish to make for each holiday. Ethan picked a Dutch Apple Pie, Alex picked a pumpkin pie and Christian always makes his potatoes (which have evolved to include sour cream, ranch dressing and a whole bunch of other things I can't eat! We call them heart attack in a bowl.)

The turkey is brining, Ethan's pie is in done, Alex's pie is in the oven and Christian will make his potatoes tomorrow.

I have done nothing but run around (new tires, oil change, to the laundromat to wash the new king size comforter, two trips to the grocery store, picking the neighbor kid up from school... I have been on the go since 7am) and bake today (two pies, 6 dozen pumpkin oatmeal cookies and a bunch of crostini.) I'm going to bed!

Pumpkin Oatmeal Cookies

3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 15 oz. can solid pack pumpkin
1 tsp. vanilla
1 1/2 c. whole wheat flour
1 tsp. baking soda
1 tsp. salt (opt.)
1 1/2 t. pumpkin pie spice
3 c. oatmeal (quick or old fashioned, uncooked)

Preheat oven to 375 degrees.

Mix together pumpkin, sugars and vanilla.

Combine flour, baking soda, salt and spices; add to pumpkin mixture, mixing well. Stir in oats. Drop by rounded tablespoonfuls onto lightly sprayed cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie. Cool 1 minute on cookie sheet; remove to wire cooling rack. Store in tightly covered container. 4 1/2 dozen.

Notes:
* My cookies take 10 minutes

* These do not spread (no butter) so you can crowd them onto the cookie sheet. I use a small scoop thing and lightly flaten the balls with a lightly sprayed measuring cup.
